Hi,
who knows besides the normal belt presetting how are tray presetted by the various caterers. of course in some countries it is down on rectangle tables as well.

Most commonly used is as you've mentioned normal belt tray presetting using conveyor belts, particularly when it comes to large volumes of Economy Class trays. However, in some parts of the world, I've seen, trays are assembled at single work stations, usually called 'make & pack'. This is widely used in European Kitchens.

Hi,
can picture and any means of extracting the methodlogy involved. does it really reduce manpower and cost. i was told it could reduce and how does one check ont he quality and qty if there is any missing out.
any evidence that it is better. The other means which i saw was the protema.

Well.. as for manpower costs, I would guess, the work station method definitely contribute to reduce the number of tray set staff needed for tray setting, in comparison to number of staff needed to work at a tray belt. As for the checking of quality too, in theory, I would think we can expect a better quality tray sets in work station method due to only either one or two people involved in 'make & pack' and perhaps more 'attention to detail' also

Agreed both have positives and negatives for different purposes.

Set up systems are fine for presetting - used by dates need to be kept in check on packaged items that are decanted into tubs for refill, never refill until the tubs empty cross used by dates.

When you have belts with larger teams, if someone is toileting, sick, late or otherwise the whole belt gets held up, so speed gets lost in the many stoppages.

Sometimes if its at night you cant run the belt without enough members in the team

Belts are good for plating food as it assists people working to a set speed instead of the 200 plates on a table set up where you can stop & talk as much as you want.

I like the 2 man set up system for presetting and quality is just fine (keep up used by dates)
